Friendly on the Slopes and Budget – Girls Weekend in Salt Lake

Ready for a Girls weekend trip? Are you needing a quick Girl Time FIX on a tight budget? Please come along as we break down how you can Easily achieve your NEED for some gal time on the slopes.

 

Our flights on American were 1/2 the rate of Delta – We did all have one layover and early flight times – BUT we saved about $400 YES, $400 each ticket. Our flight arrived into SLC early – SILVER LINING for leaving early is your journey starts early :).

The airport is small and very easy to navigate. The rental car option was not on our budget friendly spreadsheet. By the time we figured parking fees, gas and daily charges, we realized a rental car would have been the more expensive option.  A couple of  shuttle services, All Resort Express is one, are conveniently located near baggage claim. We are Uber-ers. SLC is also very Uber friendly – they have a special place, again well marked and close to baggage claim, for Uber and Lyft pickup.

We decided to go up to Cottonwood Canyon at the base of Wasatch Mountains – This trip had to be on the budget friendly side so we chose to stay at the Hyatt Place in Cottonwood. Nice area with several great eateries. We were famished – left our bags with the front desk and walked to Spitz – a street Mediterranean infusion of yumminess. On our way back toward the hotel, there was a ski shop – selling DISCOUNTED ski passes. So we saved $15 per ticket by buying them at this shop. No gimmick, just less expensive 🙂 We were so happy and felt like our lunch was just free.

We were only staying at the base of Wasatch Mountains for 2 nights so not too much unpacking – but we did unpack enough to feel settled. The hotel has a jacuzzi hot tub, perfect for ending our first day of travel. Olivia and I suited up, opened a bottle of wine we had packed….budget friendly trip….., and headed to hot tub. This leads me to PACK YOUR OWN WINE or BEVERAGE of Choice when headed to Cottonwood Hyatt Place. Salt Lake City in general is not very alcohol friendly. The hotel will NOT let you take their alcoholic beverages out of the small bar area AND you MUST order food if you are going to have alcohol at this “bar”. We did not know all of this, however very happy we had our own stash. Ahhhhh, very nice way to wind down and catch up as ladies do so well.

We organized a shuttle for  Maddison, her flight was delayed – see how to prepare for Stranded at the Airport – so we did not think she should Uber so late by herself.

We woke up early to figure out the slopes. Since we had not skied in over 5 years, we decided that Solitude Ski Resort was our place to reconnect with snow and skis.

The Hyatt has a shuttle that takes you to Bingham Junction ski bus stop on route 972. The 972 runs every 15-20 minutes – CHECK THE SCHEDULE – and costs just over $4 each. Solitude’s Moonbeam Lodge was the first stop. This is also where you rent gear. We rented our gear and off we went. Have your own gear? no problem the bus has room for all of that and more.

Solitude was a great choice for us. The Moonbeam ski lodge was a nice place for me to get some work done and I could see the girls ski down the last hill toward me. Too fun, it was so great to see them giggling all the way down that last stretch. As the day progressed they ventured higher and higher up the mountain.

about 2 o’clock, we were ready for a break. We boarded the resort shuttle, which runs every 15 minutes, and headed up to Solitude Village – What a cute place, very quaint with all the amenities one would need. We chose to dine at the Honeycomb Grill  – the restaurant here in the video – was perfect choice for us. They also have a pizzeria and bakery in the village.

I ordered a chacutterrie platter with red wine. Maddison was fish tacos and water. Olivia just wanted a beer. She knew about a local brewer, Wasatch Brewery – Honeycomb Grill carried the GhostRider…good choice, Olivia! We all shared the Blackberry Buckle and tried the beer – this was a great pairing too – it was so delicious, I had to come home and recreate my gluten free version:

Well would you know that the slopes close at 4 PM? Seemed really early to us, but we were just about done – would have liked to do one or two more runs as we were just getting our ski legs. SILVER LINING: We got to go back earlier than expected so the girls could do school work and we had another eve of quality time in hot tub.

Well A GREAT GALS DAY on the slopes – we were all tired and the girls had a bit of school work to catch up on tonight.

We went back to the hot tub with our coffee cup wine and enjoyed another long soak and convo. Skiing is an expensive hobby, however if you save money in other places (hotel room, eating, flights) – “team building” on the mountain is well worth the investment!

Love cobblers but want to be gluten free? kind of dairy free? natural sugars? Have I created the BEST Blackberry Buckle for you! Also this was so yummy with a beer pairing – look out below for that special addition to this experience.

We were inspired by our latest trip to Salt Lake City (see our adventure here) to recreate a Blackberry Buckle we devoured at Solitude Ski Lodges, Honeycomb Grill. While skiing we took a warm break and enjoyed a delicious treat of blackberry cobbler, paired with a local beer, Wasatch GhostRider IPA. This cobbler is so DELISH I had two jars….Only one beer 😉

Ingredients to make berry cobbler. Simple Truth Coconut Milk replaces dairy milk. Sugar and Spice Market Gluten Free flour was terrific at making a gooey crispy crust. First off we want the organic blackberries to mush in LOVE with themselves – wash them, place in bowl and smoosh them up with a fork. Set aside to allow the juices and sugars to release among  each other.

 

So on to the speedy part: I tell you this recipe is quick, easy and tasty – It will become a favorite desert in no time!

Second, measure out your dry ingredients; gluten free flour,  sucanat , baking powder and pinch of Himalayan sea salt  so they are easy to add to the mixer one at a time. I use Custard Cups  Ha, I love them because they come with lids and they are perfect size.

    

On low speed put all of the dry ingredients in your mixer – you do not need a large mixer, you can “fork” the ingredients together for this recipe. Although I just love my KitchenAid Classic Stand Mixer, for many other jobbies – She does the trick so effortlessly.

In a Pyrex  2-Cup Glass Measuring Cup  Mix your coconut milk and Madagascar Bourbon Vanilla Extract, the good stuff ;0

Combine the wet mixture of vanilla and coconut milk into your dry mixture – put the mixer  at low speed, 1 as you stir in the wet mixture. You may need to make sure the wet and dry ingredients are well mixed by taking a spatula to the edges. Once all ingredients are in place, whiz up the blender up to 3 for a minute to combine all parts.

   

Go ahead and turn on the oven to 350 F. Melt your organic, grass fed butter 😉 pour into your baking dish, swoosh around to coat sides, corners, and bottom. Pour the additional butter into your mixer. Once butter is in the batter, blend on low speed.

Pour batter into your buttered baking dish…..Ahhhhh time for our beautiful blackberries – start to pour them in gently.

After the berries are somewhat centralized, push them out a bit to the edges with a soft nudge. You do want to keep a crust edge for serving this delight to your peeps. Place in your pre heated 350 F oven. Cook for 50 minutes – 1 hour, depending on crispy crust desires.

Using my Mini-Serving Spatula  I put two scoops of cobbler, careful to keep the crust on top, into my mason jelly jars  – top with a fresh blackberry and a dollop of whip cream – Serve it up 🙂

We happened upon this pairing at the Honeycomb Grill while sking Utah, at Solitude Ski Resort – DELISH To be totally gluten free, we suggest adding a pear cider to chime with the blackberries. CHEERS
